What a pleasant surprise to head over to Houlihan’s for dinner the other evening. I’ve heard for months about spiralized vegetable noodles BUT had never experienced them. Houlihan’s has entered into a partnership with Ali Maffucci, renowned for her best-selling cookbook Inspiralized, and her food blog to create three dishes to be served at their restaurants using the Spiralizer. The Butternut Squash and Sausage Lasagne entree was unbelievably delicious!!!!!!
For some time now sites that I follow that create meals for healthier living styles have been coming up with dishes using Ms. Maffucci’s signature product the Spiralizer. Curiosity sometimes makes me do rash things, like purchasing items for the kitchen that I’ll use twice and then never again. I held my own not purchasing the new tool because I didn’t want to “make that mistake again” till I’ve tried a recipe using this technique. Well let me tell you, I’m in. I’ll be looking for one quite soon.
The Butternut Squash and Italian Sausage Lasagne, from the first bite, was an ah-ha moment. It isn’t lasagna in the traditional sense – huge and calorie laden. Nope, it was 430 calories. According to LiveStrong.com, on average restaurant lasagna can be upwards 500 to 900 calories. Houlihan’s offers the nutritional information on their website.
Houlihan’s Test Kitchen chef, Nick Janner worked with Ms. Maffucci’s to create three dishes that are available for a limited time. Restaraunts look for ways to offer patrons flavorful dishes that fit into their lifestyles. Each dish uses vegetable “noodles” created by the Spiralizer in place of pasta to achieve a carb healthy meal.
From Houlihan’s site these are the three new items:
- Thai Noodle Salad:Sriracha Thai peanut sauce tossed with spiralized fresh zucchini ‘noodles,’ mango, red peppers, snow peas, tri-colored quinoa, basil, mint and almonds with the option to add grilled chicken or grilled salmon.
- Sweet Potato, Corn & Bacon Mexicali Flatbread: Spiralized sweet potatoes and zucchini, sweet corn, bacon, Greek yogurt white sauce, pickled jalapeños, blend of cheeses and avocado salsa.
- Butternut Squash and Sausage Lasagna:Spiralized butternut squash ‘noodles,’ herbed ricotta, Italian sausage, sautéed organic kale-spinach-chard blend, marinara and mozzarella, served with a pesto zucchini ‘noodle’ side salad.
