If it’s football season it’s great food season

With football season returning it gives way to great food ideas.  Many years ago my sister-in-law Cindy created a warm appetizer that became my forever favorite.  It had mushrooms, swiss cheese, a buttery layer of seasonings all pressed into a loaf of artisanal bread.

I’ve modified it a bit to make it a bit more hearty.

Easy Warm Appetizer (dinner, lunch)

  • 1 loaf of either Vienna bread or sourdough bread.
  • Baby Swiss cheese, sliced
  • Fresh crimini mushrooms sliced, Optional.
  • ½ pound sliced deli ham
  • 1 shallot, chopped
  • 1 stick butter, melted
  • 1 T. dry mustard
  • 2 T. poppy seeds (really to taste)
  • 2 teas. Lawreys salt
  • 1 teas. lemon juice

With a loaf of bread make slices till you get almost to the bottom (leaving the slice still attached to the loaf).  Slice the entire loaf that way.  Rip off a large sheet of aluminum foil to use as your baking vessel.  Using a slice of cheese, ham and a few mushrooms, place them in-between the slices so that each slice has a little “package” of goodness.  Sprinkle the shallot over the top of the stuffed loaf.

Mix the remaining ingredients and pour over the bread.  Wrap the bread in foil and bake at 350 for 40 minutes.  AMAZING!
