Who doesn’t like Pinterest? It’s so inspiring in all facets of what you do especially when it comes to cooking. The other day I saw this recipe for Oven Baked Chicken Fajitas and it sounded “worthy” for the palettes of the hubs and son. I’ve been burned before on recipes that say “the best ever” so, I read throgh it and thought this could be a keeper.
It definitely is a keeper. I’d been working in the garden ALL DAY LONG and could not stand up any longer. I cut all this up, mixed it with the spices and a half hour later DONE. AMAZING. We used the whole grain tortillas that are 50 calories each. Most importantly, the family liked them. Success.

Oven Baked Chicken Fajitas
- 1 ½ pounds boneless, skinless chicken breasts, cut into strips
- 1 tablespoon chili powder
- 1 Tablespoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon of salt
- 4 Tablespoons extra light olive oil
- 1 (15 oz.) can diced tomatoes, juice and all
- 1 small can green chilies
- 1 large Vidalia onion, sliced
- 2 cloves garlic minced
- 1 prepackaged sliced sweet peppers
- 12 tortillas
Preheat the oven to 400 degrees. Place the chicken strips into a large bowl. Add all the vegetables and garlic.
Mix the herbs in a small bowl. Sprinkle over the meat mixture. Add the olive oil and toss. Move the mixture to a 9 x 13 baking dish. Add the tomatoes and chilies and toss.
Bake uncovered for 25 to 30 minutes till the chicken is done and the vegetables are tender. Serve with tortillas and toppings.
