No Bake Lite Chocolate Dessert

UPDATE:  2/16/2012 Husband suggested using the Girl Scout Chocolate Mint cookies instead of Oreos.  Not a bad idea.

I saw this dessert the other day and just thought how great it would taste, whoops – hubby doesn’t like anything remotely tasting like peanut butter.  (((head low)))  So what could I do to modify this to 1. make it so he would eat it and 2. make it light.

Here we go.

No Bake Lite Chocolate Dessert

Crust

  • 12 Oreo Cookies low fat, crushed into crumbs
  • 3 Tablespoons butter, melted

Filling

  • 1 8 ounce package low fat cream cheese
  • 1 package sugar free Jello Chocolate Fudge instant pudding
  • 2 cups cold skim milk
  • 1 teaspoon Mexican Vanilla
  • 1 8 ounce tub lite whipped topping thawed

Make the pudding according to directions (package of pudding plus 2 cold cups skim milk).  Let firm up in the fridge – at least 20 minutes.

Place all your cookies in a Ziploc bag – don’t close it.  Using your meat mallet, crush the cookies.  Place in a small bowl and add the melted butter.  Evenly disperse the cookies into your 6 dessert dishes and press into the bottom.

Using your paddle attachment cream the cream cheese.  Add 1 cup of the pudding and vanilla and thoroughly mix scrapping down the sides of your bowl.   Fold in ¾’s of the whipped topping reserving the rest for garish.

Using your piping bag with a very large tip, pipe the pudding mixture into the dessert cups.  Chill for an hour.  Top with remaining whipped cream and chocolate shavings.

This is a very light tasting dessert.  The surprise is the Oreo crust at the bottom. 

This is a keeper.
