A new technique I picked up from one of the cookie online sites that I peruse which suggested gluing 2 paint stirrers together (make sure you sand the edge) making 2 sets. Place the dough between the guides and roll to that thickness.

Pros: Not only was this fabulous to do, I didn’t use as much flour that I usually have all over the kitchen when finished. I hardly had any scraps. The cookies were all even. And the cookie was much larger than before.
Cons: Since the cookie is larger height-wise, less dough, less cookies.
