What’s for Dinner? – Grilled everything

It’s tough with kids and some hubbies regarding vegetables.  We found grilled vegetables are the answer.  THEY TASTE SO GOOD.    The colors are gorgeous and make a very nice presentation.

We also grill potatoes in foil packets.  Can’t begin to tell you how simple this is and there’s literally NO CLEANUP.  I detest messes and try often to create a dinner around no mess.

Grilling equipment:  grill basket, really good pot holders, tongs.


  • 1 medium zucchini
  • 1 yellow zucchini
  • 1 Vidalia onion
  • 1 red, green and yellow pepper
  • ½ pound Crimini mushrooms
  • Kosher salt and pepper to taste
  • ¼ cup extra light olive oil

Cut up all of your veggies and place in a large bowl.  Add the olive oil, salt and pepper.  Mix it all together so that everything is covered.    We have a 3 burner grill.  Turn your grill on and get it hot.  Turn the middle burner off, creating indirect heat, and the other two down to medium.   Place the basket on the grill and add your vegetable mixture. 

Close the lid to your grill.  In five minutes, using your tongs, toss the vegetable.  Repeat this till the onions show cartelization.  When the onions and mushrooms looked grilled that’s when your veggies are done.

Remove the basket using your potholders and pour into your serving dish.


  • 4 medium red potatoes, cubed or use the size B and use 10 – 16
  • 2 cloves garlic
  • ½ shallot minced
  • Salt and pepper to taste
  • Olive oil

Wash the potatoes and cube them in about 1/2 inch pieces.   Pull out a 24 to 36 inch piece of heavy aluminum foil.  The dull side of the aluminum foil should face up.   Either spread a little butter or brush olive oil in the center of what will become the bottom of the packet.    Place the potatoes in the center of that packet.  Salt and pepper to taste.  Add the garlic and drizzle the olive oil over the potatoes.  Mix with your hands to make sure everything is coated.   Now fold the sides to the center shaking the potatoes to the center.  Fold several times leaving a little space at the top.  Fold the ends up several times.  There should be movement in the packet.

You can place this on the grill when you are cooking your meat.  Keep in mind it takes approximately 30 minutes for the potatoes to cook.   This packet can really go anywhere on the grill.  Make sure you use your potholders when handling the packet.  Be very careful when opening because the steam that’s present  is VERY hot. 

You could even make individual packets of potatoes which would be one potato per packet.  Just adjust the “to taste” of garlic, salt, pepper and shallots.  You could even have your family create their own.  The grill picture on the bottom shows the pocket.  We only grilled 2 medium sized potatoes that night.
