Pico de gallo vegetables

I came home from the gym and needed to make a quality carbohydrate dish that incorporated vegetables.  I stopped at Caputos and picked up a 1 pound container of their pico de gallo.  Their pico de galle is amazing.  There is a little cilantro in it.   

Pico de Gallo Vegetables

  • 1 ½ cups frozen corn, thawed
  • 3 celery stalks, chopped
  • 3 scallions, sliced
  • 1 green pepper, chopped
  • 1 can black beans


  • Juice of one lime
  • ¼ cup extra light olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 3 cloves garlic minced

Mix all the ingredients.  And serve!
