I’ve tried a lot of frostings but this one is by far the best tasting and smoothest. It’s Chocolate Butter Frosting.
CHOCOLATE BUTTER FROSTING
- 1/3 cup soft butter
- 2 ounces of fine chocolate melted and cooled
- 2 cups of confetioners’ sugar
- 1/4 teaspoon kosher salt
- 1 1/2 teaspoons vanilla
- 2 Tablespoons of half and half
To Melt Chocolate:
Cut up your 2 ounces of fine chocolate into pieces. Place in a small glass mixing bowl. Using a small sauce pan filled 1/3 with water, place the glass mixing bowl on top of the small pan just so it does not touch the water. Bring the water to a simmer and the chocolate will melt slowly. Use a silicone spatula to stir. Set aside to cool.
To Make the Frosting:
- Using your electric mixer thoroughly combine the COOLED melted chocolate and the butter.
- Add the sugar and salt.
- Add the half and half and vanilla.
- Beat until smooth.
Should frost a 8 or 9 inch layer cake or a 13 x 9 inch sheet cake.
What’s a fine chocolate? It’s one that does taste like the average chocolate bar. It’s one that you consisstantly say, “LOVE IT”. Ghirardelli is an excellent example of fine chocolate. One can purchase it in most grocery stores.
Then there’s one of the really best chocolates that is very difficult to find and that’s Scharffen Berger chocolates. It’s made in Calafornia using artisan chocolate methods. Here you can find their chocolate making process.
