Lemon Shortbread Cookies with Lemon Icing

The ingredients and utensils to make the lemon icing for the Lemon Shortbread cookies are to the left.

    2 1/2 cups confectioners sugar
  • juice of a whole lemon
  • 1/8 teaspoon of sea salt
  • 1/2 teaspoon of vanilla
  • 1 tablespon of water

Squeeze the lemon with a citrus reamer.  To the confectionate sugar add the lemon, vanilla and salt.  Whisk till smooth.  It should be runny.  If not add water by tablespoon till desired consistancy.
